Mix the lukewarm water with the yeast and sugar.
Add the flour, oil and mix in a food processor for 3-4 minutes; then add the salt and continue mixing for 1 minute.
Leave the dough to rest for at least 1 hour in a bowl covered with a damp towel.
Work the dough on a floured work surface and shape 3 balls.
Roll out each ball to form a rectangle (1 to 2 cm thick).
Leave to rest on a wire rack covered with parchment paper for 20 minutes.
Bake for 10 minutes at 180°C.
Garnish your panini rolls with goat cheese, smoked salmon, dill and pepper.
Oven grill each panini for 2-3 minutes.
Serve warm with a side salad seasoned with a drizzle of oil and a little cider/raspberry vinegar.
